Pumpkin Pecan Overnight Oats!

Today’s a sick day, when my taste buds are most sensitive.

I’ll be honest, I made these Overnight Oat’s last night with a lot of doubt. I’ve made pumpkin things before to where I didn’t like them. I’m sure you have too. Pumpkin, in all it’s deliciousness, can be a tricky one! Anyway, I was so wrong, and these were absolutely delicious! No fear the Pumpkin ONO’s!

Breakfast

  • 1/3 cup Oats (I use Coach’s Oats from Costco)
  • 1/3 cup 100% Pumpkin Puree
  • 1/3 cup Unsweetened Original Soy Milk
  • 1 tbsp. Maple/Agave Syrup
  • 1 tbsp. Unsweetened Coconut (Shredded)
  • 1 tbsp. Chia Seeds
  • 1 tbsp. Raisins
  • 1 tsp. Pumpkin Pie Spice
  • 1 shake cinnamon

In the morning, I added some more Soy milk to the Oats, and put them into a bowl. While doing that, I was toasting some Pecans on the stove. It’s super simple! Just get out a pan, and heat the nuts over medium heat for a few minutes. You can see when they are toasted.

I added some brown sugar to the nuts while they were still in the pan, and quickly stirred it around and plopped em’ on the Oatmeal. If you leave the brown sugar heated too long it could burn.

This. was. so. good! I have another bowl waiting for me for tomorrow morning 🙂

Oh, and I know this is random, but I really was in the mood for lemon this morning. Hot lemon water made me. I added a few squeezed of lemon on top. It was tastey 🙂

Smoothie

A few hours after breakfast, I made a smoothie! I am trying to get as man easily digestible nutrients in my body as possible. I’m also avoiding coffee, and staying in bed.

  • 1 banana
  • 1 apple
  • 1 cup frozen berries
  • Kale
  • handful of Spinach
  • 1 tbsp. Chia seeds
  • 1 tbsp. Cacao
  • Soy Milk
  • Water
  • Apple Juice (Organic)

I know, so many random ingredients, but once it was all blended together, it tasted delish, and I feel like I got soo many good antioxidant foods into me! Another smoothie later today! It’s a smoothie day, for sure! Maybe some soup, too?

I swear, doggies know when you are sick… they stick by your side! Noah and Rumo have been such cuddle buddies today. My boys have really been taking care of me. Marco even brought me a whole pack of Emergen-C!
