{Recipe} Protein Packed Breakfast Casserole – One Minute Breakfast

Good morning everyone!

So, my couch did come yesterday, and it is so nice! BUT, the loveseat… the loveseat had a crooked and cracked leg. Pretty sure it was dropped out of the delivery truck… Okay, positive… I walked to the mailbox as they were unloading and saw that happen… so, that’s coming this weekend (hopefully) and then I will post a photo of the whole set put together. Even the lamp shade is bent out of shape. I think we were the last home delivery of the day 😉 Everything else turned out great, and we are really happy with our stuff!

Protein Packed Breakfast Casserole With Refried Beans and Salsa Verde

Today, I wanted to post an easy breakfast recipe. Cook once, eat 8 times! Sounds good, right? I usually cook this for dinner one night, and then have it for breakfast the rest of the week. When I do this, I just move my Green Smoothie on over to have for snack, lunch, or dinner. It works out perfectly!

I learned this over my Senior Trip while in Cancun! We were served beans at breakfast daily, and I loved it! Warm, delicious, and comforting. Definitely different, but so yummy. Especially with eggs. Yum! Some of these photos are from dinner, some are from lunch, and some are from breakfast. Whatever time of day I felt like my egg casserole 🙂

Protein Packed Breakfast Casserole With Refried Beans

Oven 375
Ingredients:
1 dozen Eggs
1 block Extra Firm Tofu
1/2 Onion
1/2 bag Organic Spinach
1 tbsp. Olive Oil
Italian Seasoning
Sea Salt
Pepper
1) dice and saute the onion and tofu, sprinkle this with italian seasoning
2) whisk together eggs, sauteed onion + tofu, chopped spinach, salt, and pepper
3) spray a large glass baking dish with non-stick spray (coconut or olive oil are great)
4) pour the mixture throughout the pan – should be about 1 inch thick
5) bake for about 20-25 minutes until cooked through the middle – check with fork in center
Cut it into 8 servings for an easy to go breakfast.
This is so simple. Add some salsa on top, and you’re done!
