Salmon & Veggies with a Hint of Lemon
So, after babysitting today I headed off to a night Step Class!
Since I slept in this morning until 8, I didn’t want to rush off and hit the 8:30 class. I like to have my lazy mornings! 🙂
I got such a good workout tonight, and decided to double my risers. I usually just do one pair of risers and the step, but tonight I used 2 sets, and I was sweating by the end of that class! I do not sweat like that normally! I think its time to start using 2 pairs regularly! Tonight’s class was particularly fun because two of my friends (Hi Kelsie & Leah!!) took the class too.
When I got home, I made salmon and veggies. I was thinking about this dinner as I drove home!
In the veggies, I put a ton of spinach, about 1 cup of broccoli, 1 tbsp. of EVOO, and 2 cloves of garlic (did I say that right??)
I also had about 1/3 of an avocado.
To cook the salmon, I used my George Forman Grill! 8 minutes on the side with the skin… flip… (skin sticks to the Grill- this is a good thing) and then cook on the other side for another 8-14 minutes… just check the fish as you go and make sure it’s cooked all the way through 🙂
I also drizzled a little bit of lemon over everything, cause I feelin citrus tonight 😉
For dessert, I had one Green Tea Mochi Ball. I really wanted something sweet, and this was perfect!
Now, I am just relaxing, listening to music. Gotye song “Somebody that I used to know” is totally stuck in my head, and I have it playing over and over on YouTube! Not helping with the “stuck-in-my-head-ness” is it? Haha, it’s just so catchy to me and I love it!

Oh, one more thing! Earlier today I said I had something cool in mind for lunch… I never made that! I didn’t end up feeling like it today, so hopefully I will wake up and want it for breakfast. It’s just a simple combo that I have been really curious about. I will try and do that tomorrow- taste buds willing 😉
