Okay, it’s now Monday, and I need to catch you all up on Saturday + Sunday
Lets start with Saturday –
Coffee + Half & Half with Kayla + 1 chocolate dunker each. We love our Coffee Talk!
Whole wheat toast with avo, 1 egg, and 1/2 slice of muenster cheese + 8oz each green smoothie
A tall Soy Latte from Starbucks, plus a 3.5 mile fast walk on the beach
We split a Cranberry KIND Bar
Noodle Stir-fry that neither of us could finish + 2 baby spanikopitas
Small Piece of Banana Bread
Tropical Passion Tea Latte on my way to babysit (definitely needed a pick-me-up!)
Leftover Yolandas. The last 1/3 of the meal I got on Tuesday + another square of my no-sugar flour-free banana bread
My dinner Saturday Night was identical to THIS ONE
Okay, now Sunday
Coffee + Half & Half
Small Piece of toast with 1/4 avocado (ate the other 1/4 as well) + small sweet potato (no toppings – sweet enough alone!)
As I was Health Coaching yesterday, Marco popped his head in my door and handed me this Passion Tea. I drank half early in the day, and the other half later in the night. A large was too much for all at once. Plus it was a great treat later on 🙂
The night before, I worked until midnight, and then had to drive home 30 minutes, so he knew I was super tired Sunday. He did this just because. Seriously… I feel so blessed that he always does such thoughtful things… I know that can be rare…
At 2:30, we packed up some lunch and had a picnic on the beach, and studied our Counseling Book. We are starting counseling together to each deal with some things from our past. I’ve never done counseling with someone who is licensed before, so we will see how it goes 🙂 I’ve only done counseling through my Church.
After our little picnic, we came home and watched a movie that I LOVED when I was little…. will Marco kill me if I tell you all the name? Awe heck…. I’ll just tell you, and you can all applaud him for caring enough to sit through this movie! 😉

After our movie, we had dinner. I had some leftover Polenta, so I made a Polenta Casserole with steamed chicken, steamed broccoli, gorgonzola cheese, mozzarella cheese, and roasted bell pepper + eggplant spread
I split the little casserole into 4 portions. Now I have some for lunch this week!
After dinner, we put our warm clothes on and headed to the park for a 2.6 mile fast walk. I love walking 🙂
Okay, it’s now Monday, and I’m off to make us lunch before our studying & appointment. Wish us luck!
