So Many Feel-Good Eats

Good morning beautiful! I’m here to share more daily eats with you, as promised on Wednesday. I asked, and you girls answered. I love continuing to share these posts with you!

Before we start, I want to remind us all that the purpose of sharing my daily eats is to encourage each of you, individually, to listen to your own body’s wants and needs. These posts are to bring ideas, to help us relate, and for us to connect in a light & fun way.

WEDNESDAY

Daily Eats | Healthy Hits the Spot - 1 of 10

Wednesday morning started out with work from Simone’s coffee shop for several hours. When I got back to the house, mom was making smoothies and set one aside for me to have for breakfast as I continued to work. Yum! This was so good. Fruit, water, flaxseed, moringa powder, and water.

After working from home through the morning, I drove out to the beach to meet with clients via the phone. I have a little spot that I now love to park, where it’s nice a cool, to hold my meetings. It’s more quiet, peaceful, and away. My own mobile office!

After my client session, I drove to the gym to decompress for the day. This has been a little bit of a routine this week! When I got home, I snacked on a few grapes and a strawberry from this bowl while I put together a salad for the family to share.

This salad had arugula, butter leaf lettuce, flaxseed, mushrooms, garbanzo beans, green onions, pine nuts, slivered almonds, a few sesame sticks, and cilantro dressing. Yum yum! Basically, I grabbed everything that would work out of the fridge and made a big ol’ salad out of it!

After lunch, I worked and visited with my family for a couple more hours, got the car all packed up, and snacked on a some of my dads homemade pesto and hummus with brown rice crackers – yes, he made them both from scratch. So good!

After this, Marco and I drove back to SLO. His first day of work was Thursday, and I wanted to spend more time with him, so I took him home and drove back to Ventura myself the next morning.

When we got home to SLO (it’s a little over 2 hours drive) we swung by Trader Joe’s, picked up some fresh veggies, and I made us dinner at home. Salmon baked with capers, garlic, olive oil, sea-salt, and pepper + sides of sautéed spinach with garlic and olive oil, and sautéed mushrooms and broccoli in coconut oil.

THURSDAY

Daily Eats | Healthy Hits the Spot - 6 of 10

I woke up bright and early with Marco on Thursday morning. I made him a quick breakfast, showered, got ready myself, and then met my friend Asia at 6:00 AM to work from Starbucks. While there I had a coffee, and was given this salad which I ate later on in the morning for breakfast, before my drive back to Ventura.

When I arrived back in Ventura I was nice and hungry and had some more brown rice crackers with dads homemade pesto and hummus. I’ve been loving this! After my snack, I hopped back in the car, and headed out to another coffee shop to meet with a private client for her coaching call. (I’ll have openings soon!)

When I got home from working, I made myself a super basic salad. I think we’ve made so many salads this week that my parents are basically out of everything except for lettuce. Ha! I’ll have to run to Trader Joe’s for them today. Any favorite salad combo’s?

After my salad, my cousin Haley and I hopped in the car and drove to Santa Barbara to hang out for the day, while my mama spent time with her sister. Haley and I shopped in SB for hours. It was so nice to get walking and talking in. Ah, two of my favorite things!

Daily Eats | Healthy Hits the Spot - 9 of 10

Haley and I didn’t get home from our Santa Barbara day until almost 8:00 PM. Still, I made us all dinner. Sautéed spinach with garlic, roasted broccoli, baked organic golden potatoes, and salmon. WIN! They loved it. Does it make anyone else happy when your parents love what you make?

Today, I’ve got a full day ahead: This morning I’ll be working, then I’m going to meet a friend to walk, then a hair appointment (I’m adding blonde!), then some grocery shopping for the parents and a little workout, then meeting a friend for coffee, then dinner with Marco’s family. Yay!
