Spring Must Be Early
Good evening everyone! I have a little bit of time before Marco & I head off to the movies, so I thought I’d update you all on Thursday + Friday’s eats!
Thursday
Breakfast was eggs & toast
Lunch was leftover eggplant parmesan + a small side of my Dads homemade potato salad
For a petite treat, I got out a few squares of dark chocolate. I was okay with just two, so I saved the other two for later
I put them in the freezer because frozen chocolate is the best! I had these while I was cooking dinner and hanging out with my Mom and Marco, because that sounded the most enjoyable 🙂
For a mid-day snack I made Marco and I a PB + Banana Smoothie to split
It’s interesting how I’ve been craving salads and smoothies so much again. It feels like Spring in southern California!
We had a super late dinner @ 8:30 of asian salad + shrimp stir-fry. This salad had spring mix, shredded carrots, slivered almonds and angel hair cabbage with a ginger dressing.
After I made dinner, I made my Dad a big ol’ bowl of popcorn. I felt bad that I didn’t make enough dinner for everyone, even though no one mentioned anything… I was still thinking of how much my Dad’s been cooking for us! It’s been so nice!
Marco and I grabbed some popcorn from the bowl to split —> as you can see, he had already started the splitting 😉
Friday
Friday morning was eggs & toast
Lunch was salad with Goddess dressing from TJ’s and some multi-grain crackers
Dinner was taco salad with avocado & homemade salsa
My petite treat was a tiny bowl of yogurt with fresh berries on top. HOLY COW. This was amazing! My Mom snuck some sugar in the berries 😉
Alrighty, I’m about to make a big ol’ batch of popcorn to take to the movies… hehehe
