Simple & Fresh Pasta Salad Recipe For Summer
So last week, my doorstep was blessed with a big ol’ box of goodness named “Sun Basket.” It was full of real, whole food, already portioned-out, thought-out, and totally flavored-out. One-word: YUM!… and easy, fun, and simple!
I’ve got recipes to share with you all!
My Sister-n-law, who just had a baby, was on the lookout for food-delivery companies. I told her I’d keep my eyes open and ask around. Funny enough, that same week Sun Basket emailed me and asked if Healthy Hits would want to give them a try. Free groceries? Free recipes? Half the work already done for me? SURE!
So, here’s how it worked. I went to their website menu and picked the 3 meals that looked best to me. I chose:
- Seared pork loin with bacon-braised escarole and charred grapes (recipe)
- Tzatziki-topped turkey meatballs and arugula salad (recipe)
- Pine nut and arugula pasta primavera with cherry tomatoes and fresh mozzarella (recipe)
Note: they change the menu weekly!
Then, shipped to my front door: a Sun Basket box. All ingredients inside, packed like you see below with three recipe cards for my meals (Woo-hoo! I can make them again later).
I stuck everything in the fridge, and got to cooking the first night. It was so easy! And so fun, and I tried so many seasoning/combinations that I wouldn’t normally try on my own.
My first and ABSOLUTE favorite: Pine nut and arugula pasta primavera with cherry tomatoes and fresh mozzarella (recipe). Yum!
Each recipe serves two. Marco had training all week, so guess what that meant for me? Dinner & lunch the next day. Yeah! (Sorry, Marco!)
I ate it chilled the next day… and oh my goodness… those flavors sat overnight and got even better!
Other things I loved about Sun Basket…
They included a “Petite-Treat,” as I call them, in my basket. Awe…

My cousin had come over this night, so I made this for us and it was a hit. Such fun flavors!
You might not guess this about me, but I get a little nervous when cooking for other people (except, Marco… because he just eats anything – ha!). It was so nice to have a recipe that was sort of done for me by someone else… It took the pressure off.
I could totally see myself ordering another Sun Basket box for a weekend that a friend comes to visit… just for fun! We could make the recipes together.

Funny story… this meal landed on one of those nights my hubby had training. So, I ate one serving for dinner, and packed the rest away for the next day.
The next day at lunch, I went to the fridge to grab the second serving and heat it up and noticed a HUGE bite out of the pork loin… Marco…! Haha! He totally snuck in a took a big ol’ bite out when he got home from work (don’t feel bad for him – he got to eat wherever he wanted each night of the week and had it paid for – haha).
Alright… well, who wants to get their own Sun Basket?! I feel like this would be the PERFECT way to treat yourself during a busier week. Planned for you dinners. So awesome…
