Super Simple Chicken Curry…and Daily Eats!

ย Good morning all! How’d you sleep?
I seriously sleptย like a babyย last night!
Breakfastย yesterday was two eggs on sourdough. I did my Bible Study first, and then put it away while I ate ๐
Aroundย 12:00ย I had this leftover gluten free, brown rice, pesto pasta.
At 12:30 I went to my Momma’s, had coffee, visited, and then ran errands. When I got home at 3:15ย I had a small meal of toasted sourdough with tuna (tuna, onion, mustard, and Organic mayo in food processor) with “Power to the Greens” lettuce blend and Goddess dressing on the side.
I ended work at 7:00 and started making dinner. Marco was out with his buddies, so I decided to bake his fav. cookies and surprise him when he got home. I had a cookie dough ball ๐
Cooking last night was so relaxing. I was baking cookies, standing up (sit much of theย day working) doing my bible study, and letting the curry cook.
The curry isย so simple!ย I have to share…
- Buy this curry mix onย Amazon
- Buy/have on hand 1lb chicken breast, 1/2 frozen bag of Organic peas (orย any cookableย green you have on hand),ย and butter.
- Put the chicken, peas, curry mix, and 3T of butter (I love Kerrygold) in a pan/large pot
- Cover, bring to a boil, and then let simmer for 20 minutes.
- While still covered, boil for another 5 minutes.
- Put two slices of Naan in the oven at this time, and take the curry off heat.
- Bake your Naan for a couple minutes, and let the curry sit while still covered.
- Enjoy the two together!
