Sweet Potato Fries, and a Simple Recipe for Healthy Dip

Good evening friends! Hope you are having a great day!
Today, before going to Trader Joe’s with my Mom, I had two snacks
- A kiwi
- A small handful of Almonds
We got lots of goodies! I was craving sweet potato fries all day, so I bought some to have for dinner
To eat with my sweet potato fries, I made a dip:
- 1 good spoonful of non-fat plain Greek Yogurt
- 2 tsp. extra virgin olive oil
- 1/4 tsp. ground cumin
- 1 shake powdered garlic
- A touch of sea-salt
After you put these together, mix up the dip and stick in the fridge until you’re ready to eat
To go with my sweet potato fries, I had half a container of Vegetable & Grain Country Salad topped with Bruschetta. If you can see in the pictures, I always drain the oil from my bruschetta sauce. It’s way too much for me, and always makes me feel funny. By draining the oil, it doesn’t lose it’s taste and in my opinion, it tastes even better! I love Bruschetta Sauce!
I cooked my sweet potato fries in just under 1 tbsp. of coconut oil. Cook on med/high heat until the edges get golden brown.
So many people recommend using Coconut Oil for it’s healthy benefits. I’d like to find out more, because by reading the label, it seems very saturated… I don’t see how that could be healthy for you? If you have any information, send it my way! I would love to know! In the meantime, I will do some research and get back to you all. If it doesn’t have healthy benefits, I would just as happily use Olive Oil! I love it!

And, to end the night, I am blogging and watching the Oscars!
Today has been so nice, and so relaxing! I did not get ready one bit!!
I stayed in my pajama’s all day, showered quickly, and then went to TJ’s. Other than that, I have been one happy bum! 🙂
