The best gluten-free oatmeal :)
Good morning everyone! I hope you have all had a great week!
Sorry I have been so MIA… I know it’s weird that I don’t post everything I eat like I used to, but sometimes it’s just so hard to get to the computer
Well, this morning I’m going to introduce you guys to my gluten-free, super yummy oatmeal!
First, you bring 1 cup of water to a boil. Reduce heat to medium, and add 1/2 cup oats. Never again will I add the recommended 1/8 tsp of salt! I could taste it in the end, because about 3 months ago I stopped using salt. Now I can taste every little bit! Yuck!
You guys would be surprised! Like eggs- I used to ALWAYS use salt on my eggs, and didn’t like them without it. Now, if there is salt on my eggs I about gag. Stop using it for a while and I think you will be SO pleased!
While my Oatmeal was cooking (20 minutes on med. heat), I put just a few chopped walnuts and 1 tbsp. of shredded coconut over LOW heat
Delish, right? 🙂
Next, I got my syrup ready. This is my favorite kind!
I put just 1 tbsp. in a little pot like this, and stick it in the microwave for about 15 seconds right before I pour it over the top of my oatmeal
Next, I get my 1/2 a nana ready
I like to cut mine in little chunks, and then in half again. I feel like I am getting more 🙂
After my oatmeal has cooked for about 17 minutes with the occasional stir, I add just a couple splashes of unsweetened vanilla almond milk. I let that cook for about 3 more minutes. It gives it the perfect creamy taste and texture!
When my oatmeal is nearly done cooking, I turn up the heat on the coconut and walnuts so they can be nice and toasty when they go on my oatmeal (watch them closely as they burn fast!)
Then I put everything into the bowl and layer it super pretty!
And Voila! It’s done and ready to enjoy! It’s so yummy, and totally gluten-free. I’m a happy happy girl! 🙂
