This Weeks Meal Plan

Good morning! And happy Monday to you!

My boy went back to school today, so my work schedule is 8-1. Then we’re going to the Gym together this evening. Monday’s just got better ūüôā

Today I want to share this weeks Intuitive Meal Plan with you. I’ve already made 3 things on this list this weekend since we ate at home!

  1. A Different Kind Of Chicken Enchilada’s
  2. Chicken Caesar Salad
  3. Corn Tortilla Quesadilla’s
  4. Pesto Tortellini & Asparagus
  5. Chicken Club Wraps
  6. {Breakfast} Waffles, Greek Yogurt & Peaches

I added a Breakfast item in the mix because it sounded so good! It was good! I had it this morning, so that photo will be here tomorrow.

Here are the ones I’ve made so far (with recipes, so you can make them too!)

I’ve been loving her blog lately! We have lot’s of leftovers since one was plenty to fill each of our bellies. Ladies, this was a hit with the husband.

Chicken Caesar Salad

When I baked chicken for the enchiladas, I made one extra breast for salads the next day. We had these for lunch after Church yesterday.

Chicken Caesar Salad:¬†3 heads of organic romaine lettuce chopped and spun, a t. of grated/shredded parmesan cheese (better with shredded, but use whatever you have on hand), 1/4 avocado, cherry tomatoes, Trader Joe’s Romano Caesar Dressing, and croutons.¬†

Pesto Tortellini & Asparagus

Yum, this was so great. We ate this last night after weights at the Gym together. We have lot’s of leftovers of this too. Can’t wait for another dinner just the same!

Pesto Tortellini & Asparagus: ¬†pesto tortellini’s (cook as¬†instructed) with 1-2 T. of pesto sauce mixed in (the entire batch), plus on bag of frozen asparagus (cook as instructed). Once cooked, mix¬†with olive oil, sea salt, and pepper.¬†

I already shared at the top the yummy breakfast I’ll be sharing with you tomorrow, and I’ll also be sharing our yummy chicken club wraps that we’re having for lunch today. Mmm-mmm good!
