New favorite way to make a Kale Salad – take the stems out, and put the Kale in the food processor! It “chews” it for you, and takes the bitterness out! Even Marco liked this! 🙂
Thanks to Linda Hale for the brilliant idea! She made me a delicious Kale salad like this in SF!
In my salad:
- Kale
- Onion
- Carrots
- Chopped Walnuts
- Dressing = olive oil, apple cider vinegar, soy sauce
On the side, lentils with bruschetta
- Mix together and store in container:
- one package steamed lentils (Trader Joe’s)
- one container refrigerated bruschetta (Trader Joe’s)
Sunday night, Marco and I went out for a drink before dinner with family friends. Usually, when I go out for a drink I get Vodka Soda with extra lemon (thanks Angela for the idea!). This drink has much less sugar than regular drinks, and with the extra lemon, I like the flavor. Of course, I’d love a mojito or lemon drop, but those pack a ton more sugar!
+ Thai Food for dinner at Taj in Ventura, Ca! I had Saag Paneer, Naan Bread, Mixed Veggie Curry, and Rice
