Weekday Eats

Hey gorgeous!
It’s been a great work week. I have the ultimate pleasure of continuing in renewal programs with current clients, bringing on new clients, and having so much fun in financial coaching sessions.
Before we dive in, I want to remind you that these posts are NOT for comparison (if these posts are triggering for you in any way, scroll THESE posts instead).
I share my eats in hopes that you’d leave here today feeling inspired and full of PERMISSION to listen to YOUR BODY, as I listen to mine. I hope these posts fill you with the FAITH you need to let go of ALL food rules/control (just as I have!).
Monday
For a pre-breakfast on Monday I had a GoMacro bar (peanut butter chocolate chip) and coffee at Hub. I worked for a few hours and then headed back to the house.
When I arrived home I made eggs, chicken breakfast sausage, and toast. I took Abby for a walk and then got back to work.
Around 12:00 I headed to a hair appointment and stuck these snacks in my car. I munched on a few almonds before I went in and had a couple of mango slices when I was done.
I went blonder and shorter – too much fun! After my hair appointment I ran to TJ’s, did our weekly grocery shopping and picked up Marco from work.
We’re now sharing a car (will talk more about this soon and why we decided to do this!).
For dinner we had pizza and caesar salad, per Marco’s request. He’d been craving this for a few days, so we made it happen! I had a few slices of sausage and veggie pizza and some salad.
He had pepperoni with jalapeños and we packed the rest up for him to take to work for the week. Easy!
Tuesday
Tuesday through Thursday were coaching days for me. On Tuesday, I started off the day with breakfast and a walk with Abby.
In my cereal: bran flakes (the end of the bag), honey nut o’s, a little granola, banana, and flaxseed with almond milk. Yum!
For lunch I had a sesame chopped salad with with added “Just Chicken” and cherry tomatoes. Sooo good. I am looooving getting salad kits from TJ’s lately and adding some simple toppings.
After a full day of coaching sessions I brought a few pita chips and avocado/tzatziki dip up to my office to munch on while I sent a day full of follow-up session emails. This hit the spot to hold me over until dinner.
After work Marco and I popped over to our neighborhood gym and then I took Abby for another walk. It’s been SO nice to walk her in such beautiful weather!
When we got home I made us dinner which was deconstructed chili dogs. Cabbage, sliced hot dog (leftover from the weekend), and beef chili with cheese and sweet onion (chopped) on top. Soooo good. The cabbage gave this the perfect crunch.
Wednesday
On Wednesday, the day started out the same. Walking Abby, breakfast, and then showering and getting ready for work. Breakfast was two eggs, two slices of Ezekiel and two slices of chicken sausage. Yum!
For lunch I made a southwest salad (kit) from TJ’s with added “Just Chicken” and cherry tomatoes. Yum – wish I had more of this right now!
Dinner was salmon with dill + lemon 🍋, bok choy and cabbage sautéed in olive oil, and garlic risotto. Yummm this was good. I ate this with Marco and my friend Nichole. Nichole and I stayed up until 10 in the backyard, talking and drinking wine, watching the doggies play. These are the best nights!
Thursday
Thursday started off with a cup of coffee outside while these two pups (Abby + Kobe) played. We’re watching a friends dog until Monday. I took them for an AM walk and then…
…made breakfast which was two eggs, a slice of Ezekiel, and two slices of chicken sausage. Yum! I showered, got ready for work, and met with clients the rest of the day.
For lunch I had flatbread with chicken (“Just Chicken”), tzatziki, and thinly sliced red onion on top. Such an easy and yummy lunch!
For dinner we had friends over. The boys BBQ’d tri-tip and I made rice pilaf, sautéed zucchini, and caesar salad. Sooo good. We stayed up late again, in the backyard with friends and wine and a little bit of dark chocolate. Such a great night.
Friday
Friday morning started off with breakfast, walking the dogs, and getting ready for work. Breakfast was two slices of sourdough with two eggs. Yum!
After breakfast I recorded a Podcast with a client who has an awesome Podcast (I’ll share it as soon as it’s up!), worked a bit, and then ran to coffee with my cousin Haley. There, I had black coffee and a GoMacro bar.
When I got home I made myself a more substantial lunch: a kale + cruciferous salad kit with “Just Chicken” on top. So easy you guys!
For dinner, I picked up Marco from work (I’ve been keeping the car on Mondays and Fridays) and we got asada burritos on the way home. Yummmmmm!
We came back home after this and cozied up to a movie night in. We went to bed early, slept in, and had a slow morning today (Saturday). Now, I’m working a bit, sipping a smoothie, and enjoying beautiful weather.
I don’t normally work on the weekend, but we have no plans today and I wanted to get a few things done before the week. It’s feeling great!
