Weekend Eats: Sunday Beach & Ice Cream
Morning beauties… Did you see yesterday’s post on overcoming photo phobia (aka, being in pictures)? Seems like you girls really loved it, so if you missed it, see it here.
For all of you daily eats lovers, I’ll be here for the next three days sharing daily eats! We’ll start with Sunday, which was the first day this week that I started feeling better – thank goodness!
SUNDAY
Breakfast – bran flakes, pumpkin granola, flaxseed meal, and almond milk + a side of Ezekiel cinnamon raisin toast.
After breakfast, Marco and I walked over to Church where baptisms were being held all morning. Super special to see :). After Church, we came home, did some laundry & house cleaning (I had a kick to clean after being sick) and then finished and ate lunch.
Lunch – leftover enchiladas that I made Saturday. I made these Saturday evening when I started feeling better, and just tasted them. So, we’ve had plenty leftover for the week.
These were super easy to make! In the CrockPot I put one pound of boneless skinless chicken breasts with one jar of TJ’s salsa verde (green) + one can of diced green chiles (rinsed & drained to avoid saltiness). Once that cooked through, I shredded the chicken.
To put the enchiladas together, I heated the oven to 400, sprayed a large glass pan with non-stick spray, layered it with tortillas (I didn’t roll the enchiladas – it was more layered, like lasagna style), spread the shredded chicken evenly throughout, added another can of green chilies (rinsed and drained), another jar of salsa verde, mozzarella cheese, a layer of corn tortillas, and a little more cheese on top. I then topped the enchiladas with green onions, covered the pan in foil, and baked it all for about 30 minutes (give or take).
Marco said these were his favorite enchiladas – WIN! I would’ve added olives too, but he’s not a fan 🙂
After lunch we drove to Morro Bay to escape the heat. Right when we got there, we spotted an ice cream shop and decided that was the perfect treat. Chocolate for him, pecan praline for me. We ate these sitting next to the water. Felt SO good on such a hot day!
After our ice cream we walked around town, looked through shops, and then landed at a cafe for football & each a beer w/ lime. Love days like these 🙂
Dinner – we came home after Morro Bay and were both ready for dinner. So I put together caesar side salads to start (been on a caesar kick lately!)…
Our main dish was gnocchi with creamy tomato basil sauce. Gnocchi is SO easy to make. My gosh. I never realized it. You literally throw the gnocchi in boiling water for less than 5 minutes until it floats, toss it with your fav. sauce and throw some cheese on top.
Don’t think it gets any easier than that! My Dad’s also made it before with TONS of veggies. Basically, whatever veggies you have in the fridge, you can combine with this dish. Super yummy!
