Weekly Eats

Happy Labor Day! So, did you use last Friday’s post to have a better weekend? How’d it go? Today, I’m posting for all of you daily eats lovers. Last week was full of info posts, which we also love, but we don’t want to forget about daily eats! Here’s everything I had on my plate last week.
MONDAY
Breakfast – burrito with eggs and dad’s homemade salsa + a black coffee.
Lunch – tofu spring rolls + a mango kombucha.

Evening snack – a pre-cooked chicken sausage sliced up. I had just come home from TJ’s grocery shopping and was super hungry, and didn’t want to spoil my dinner appetite. So this was perfect!
Dinner – upgraded “hot dog” and chili dinner. Multigrain roll with a spicy jalapeño sausage, plus onion, tomato, cucumber, pickle, and ketchup & mustard. Yum! With a side of beef chili. Wanted to grab vegetarian chili since we were already having chicken sausages, but they were out. Next best thing!
Each night last week I was intentional about setting myself up for the next day by setting out my quiet time basket and “fuzzy” orange blanket on my dining room table. This way, it was easy to wake up and have quiet time right away. Also set the coffee for a wake-up call!
I also dove into Self-Compassion daily, which I am wildly loving. Highly recommend it!
And just because I don’t love pictures where you can’t tell what’s what (haha!) left is my leg and pinks pajama shorts. Right is Marco’s arm. Ever feel this way when you see pics like this?
TUESDAY
Breakfast – eggs on sourdough toast.
Lunch – leftover upgraded hot dog from the night before. Cook once, eat twice! Marco & I both had this for lunch this day. Simple, right?! He took his to-go for work.
Afternoon pick me up – cozy coffee blended with coconut oil & raw cacao powder.
Evening hold me over – PB, chocolate, and banana smoothie. Inside: 1 banana, almond milk, PB, raw cacao, and ice! Yum.
Dinner – orecchiette noodles with pesto and english peas (I cooked peas with olive oil, shallots, basil, and green onions prior to mixing them in). Would be so delicious with sautéed mushrooms too!
WEDNESDAY
Breakfast – over medium eggs and sourdough toast.
Lunch – leftover orecchiette pasta and peas with extra fresh basil on top and a side of watermelon.
This watermelon tasted like God’s candy. Simply amazing! I bit into it and basically smiled with each bite. So delicious!
Dinner – whole wheat flatbread with steak, tzatziki sauce, tomato, onion, green onion, and basil. The tzatziki sauce is from Trader Joe’s, but if you’d like to make your own, I’ve link to a recipe in this post.
THURSDAY
Breakfast – eggs with pepper on sourdough toast + coffee with coconut milk.
Lunch – leftover dinner from the night before plus a side salad with spring mix, avocado, mandarin oranges, plus my favorite… TJ’s blue cheese dressing… So good! (Added that after pic)
Dinner – burgers made with organic beef, whole wheat honey buns, tomato, lettuce, onion, avocado, and blue cheese dressing > mayo, ketchup, and mustard. Love.
This day I had eaten dinner super early, like 4:00… So around 9:00 I was hungry again (of course!) and had a few shrimp potstickers with gyoza sauce. Had this after enjoying a night at the hot springs with friends. Magical!
FRIDAY
Breakfast – eggs on sourdough toast with avocado and pepper + black coffee.
Lunch – leftover burger from the night before. I put it all together after this pic was taken. An easy way to store a to-go burger for the next day! Bun on one side, meat and all toppings on the other side. No soggy-ness.
Are you catching my drift on how easy this whole “cook once, eat twice” thing is? Lunch was ready to go and delicious each day!
Dinner – last item in the fridge for the week. Lentil soup with sourdough toast and avocado, plus red chili pepper flakes, a drizzle of olive oil, and sprinkle of sea-salt. Mmm!
