One thing I have been really enjoying lately is Quinoa!
Dr. Gillian Michaels would describe quinoa as Good Protein:
“Vegetable proteins are easy to break down in the body. Quinoa is an example of a vegetable protein that is very easy to digest. It looks like a grain and you can make tasty porridge with it..”
Channa Masala & Greens Quinoa
To cook Quinoa, get out a pot and boil 2 parts water and 1 part Quinoa.
For example, a basic recipe I use for 2 servings (save half for later) is dump 1 cup of Quinoa and 2 cups of water into a pot on high heat. Bring to a boil. Cover with lid. Reduce heat to a simmer and let sit for about 15-17 minutes (until all the water is absorbed). It’s VERY easy to make!
One way you could eat Quinoa would be with this Channa Masala from Trader Joes.
This is a delicious blend of onions, tomatoes, chickpeas, water, canola oil, spices, ghee (butter, milk), garlic, salt, cilantro, mango powder, turmeric, and bay leaves. (Don’t let the butter and milk scare you- this is not a high Cal food if that’s where your brain is going…)
It’s really tasty! Pop it in the microwave for 4 minutes and bam! You’ve got yourself a 20 minute meal. If you’re only feedling one person, you can split this into two portions and save one for tomorrow!
I added greens in this recipe. Southern Greens from Trader Joe’s cooked with Olive Oil, garlic, and a couple extra veggies (mushrooms, bell bepper)
Quinoa & Soup
Another simple way to eat Quinoa, is pour your favorite soup over it!
Gives it more substance to make the soup a meal, and packs in extra protein!
Breakfast Bowl Quinoa
Try Quinoa in a bowl with eggs, soyrizo (or your favorite breakfast tofu/meat), avocado, and fresh pico de gallo!
This was really good- mostly due to the incredible pico de gallo on top! My Dad made this fresh, and I will absolutely be sharing the recipe once he teaches me! It’s sooo good!
